| Abstract | A hot water treatment prototype having a 50 kg maximum
capacity/dip was developed to investigate the possibility of
labor reduction. Temperature and time combinations for hot water
dip of 48°C 20 min, 50°C 1 5 min, 53°C 10 min, 55°C 5 min and
control was tested on Nang Kl ang Wan mangoes to evaluate their
quality using this system. Time delay studies was also performed
on the system to see the difference between a one and two man
operation. The performance of the system was also evaluated with
and without the delay conditions.
Quality evaluation showed that there was no significant
difference in weight loss and total soluble so lid content at 95 %
level of confidence by DMRT. Firmness was significantly reduced
for the 53°C 10 min combination. Treatments at 53°C 10 min and
55 °C 5 min reduced the chlorophyll content considerably.
Reduction in post harvest disease was effective up to 3 and 6
days respectively for the naturally infected and artificially
inoculated fruits while on shelf. The 53°C 10 min treatment
showed higher disease reduction values than the other treatments .
Time delays in operating the prototype revealed that a
temperature of 3. 3 °C must be provided to give allowance for
temperature to drop. Time studies did not show any significant
difference between a one and two man operation in working the
system. The system ca n give an output of up to 650 kg/day taking
into account the delays in changing and heating the water. This
would require an input of 170. 3 baht/ton as an operating cost. |
