| Abstract | A hypobaric storage system was developed in this study to
evaluate the storage life of mangoes under tropical conditions,
taking into consideration the pressure, temperature and humidity
of storage conditions.
The effects of the above mentioned variables on the ripening
and quality of mangoes were evaluated based on firmness, total
soluble solids , weight loss, decay and skin color change.
The results of this study revealed that low pressure storage
markedly delay the ripening of fruit. A storage pressure of
100 a nd 60 mm Hg at 1 3 C were found to be the most effective.
The storage life of mangoes was ex tend e d up to 4 weeks.
A temperature as high a 20 C was also observed to be
effective for l ow pressure storage with not lower than 1 50 mm Hg.
In this case t h e storage life of mangoes was prolonged to 2 . 5
weeks , however, the quality of store d fruits was lower than at 13
C.
All fruits stored at subatmospheric pressure at 20 C and 1 3
C respectively ripened 1 to 2 days and 4 to 5 days after they
were transferred to s h elf life at 3 1 C. The fruits softened
similarly, but firmer fruits were found when stored at low
pressure.
Based on these results, the combined effect of low pressure
and temperature significantly influenced the quality, storage
life and s h e l f life of mangoes. Humidity also had a significant
effect on the weight loss an d decaying of fruits. |
